Arrriiiiibbbaaa! Mango Salsaaa

OK another yummy, easy AND healthy recipe! For those of you who know what mango salsa is you know how unbelievable it is. For those of you who don’t, you neeeeed to be enlightened! Here it is.

2 mangos

1/4 of a large-ish red onion

1/4 red pepper

1/4 of a medium green jalapeno pepper

handful of cilantro

half a lemon

half a lime

 

Chop the onion, red pepper, jalapeno pepper and cilantro. Be sure to chop fairly fine into true salsa form. Peel the mangos and slice the fruit off of the pit then cut into small pieces. Put it all into a serving bowl and squeeze half the lime and half the lemon onto the mixture.

Stir completely and BOOM – Mango Salsa people. UNREAL. Keep left overs in the fridge… I’m sure they won’t be there for long 😉

Enjoy this little treat by itself (like I do) or find a healthy whole wheat cracker that is high in fiber and low in CRAP to eat it with. Both delicious options!
